Potato gnocchi: These potato dumplings are now synonymous with the word gnocchi, but they didn’t appear on the scene until 1860. Gnocchi alla Romana: Made with semolina and milk, this variety is shaped into squares and baked rather than boiled.

The most well-known of these Italian dumplings are prepared using potatoes with flour and eggs. However, there are a number of different types of Italian gnocchi including those with bread, fresh ricotta, spinach, pumpkin or just semolina flour. Among the oldest types of Italian gnocchi are bread dumplings from the South Tirol known as canederli. In 15th century Lombardy, they made gnocchi called zanzarelli with bread, milk, cheese and ground almonds. These gnocchi were called malfatti, which means ‘badly made’ and is still the name that Tuscans use for their flour, spinach and ricotta dumplings also called ‘gnudi'.

The most common types of Gnocchi are: Gnocchi di Patate, alla Romana, and Parisienne. Gnocchi di Patate is made by combining egg, potato, and flour into a paste-like dough. The dough is then rolled into ropes, sliced into pillow-like-cubes, boiled until they float to the surface of the water, and finished off with a pan sear in which ever sauce you desire. Gnocchi alla Romana is made using semolina, a coarse grind of high-protein durum wheat similar to polenta. The Semolina is boiled in milk or water, spread onto a baking sheet to cool and harden, and lastly cut into round disks. Gnocchi Parisienne is made using pâte à choux, or simply put, a combination of flour, egg, and water, often mixed with herbs and cheese. The mixture is then scooped into a piping bag, piped and cut directly into a pot of boiling water.

Potato gnocchi are the most common variety of gnocchi you’ll find outside of Italy, and they’re generally eaten in the north of the country. Gnudi, thought of as ‘naked ravioli’ because they look like ravioli filling without being encased in pasta, are much more common than their potato-filled cousins from the north. Gnocchi Parisienne is the French take on gnocchi, which was so successful it’s often seen in Italian restaurants today, made with a choux pastry base.
