In un tegame capiente (di acciaio o in coccio), soffriggere le verdure con un filo d’olio extravergine d’oliva. Aggiungere il peperoncino e se si desidera uno spicchio d’aglio. Stufare il tutto per una decina di minuti e all’occorrenza aggiungere poca acqua. Quindi versare le lenticchie e le foglie d’alloro secco e fare insaporire per pochi minuti. Aggiustare di sale solo a fine cottura.
